CANAPES

Smart party nibbles to gobble down

Forget sophisticated finger food that requires hours of rolling, baking and frying and go for simplicity when planning your party menu. Choose options that are stylish, prepare on the spot with few ingredients and loads of mix and match to create a variety.

Simple canapes and smart cocktails will get the party started with minimum fuss and more time for socializing.  These mini open sandwiches are perfect finger food for a party. Low-calorie and healthy for waistline watchers or eating for a particular dietary condition.

Stock up on some baguettes and slice them - use them for bruschetta style toasts, some wheat mini toast.  Top with all manner of delicious mixes.  I have used here smoked salmon, boiled chicken eggs, boiled quail eggs, sunny side up eggs, tomato salsa, hummus, prawns, mashed potatoes, salami or sausages, cherry tomatoes, cucumbers, baby corn, mayonnaise, mozzarella cheese and halloumi cheese.

Imagination is eye of soul.  So use your imagination and impress your guests.

Making:

Caviar: Is processed salted roe of large fish.  Caviar is usually eaten as an appetizer garnish. You can eat 1/2 teaspoon servings per ounce of caviar.  Caviar adds a wonderful touch of sophistication and elegance to your special occasions.

Prawns: Seasoned with lemon juice, salt for 15 minutes and then tossed in the pan with the juice for 4 to 5 minutes, until the juice evaporates and the prawns turn light pink.

Mashed potatoes:  Boil a potato, remove skin and mash it well.  Let it pass through a sieve to remove any lumps.  Heat 1 tbsp butter once the butter melts add grated garlic (optional), add 1 tbsp all purpose flour and give a good mix, pour in ½ cup milk little by little to avoid any lumps.  Now add the mashed potato, salt, pepper powder and sauté until the potatoes mix well and starts to leave the pan.  Give the mash your desired shape.  I have used a mini mould to get my shape.

Others:  Mix match combinations.

Serve them in Big platters as it will display their individual beauties and your creativity.
