CHERUPAYAR MEZHUKKUPURATTI (Green grams stir fry)


Cherupayar Mezhukkupuratti is a quick and easy vegetarian recipe. Cherrupayar can be prepared with grated coconut as well.  This dish can be served as breakfast stand alone or can be served along with Puttu or with Rice porridge

Cherupayar is a rich source of protein, and is high in fiber.  It is good source of  minerals and low calories food.  Best to have it in breakfast for people who are into morning fitness or physical hardworker or under diet control, as it keeps them full for more time.

Ingredients

  • 1 cup              Cherrupayar, soaked for 3 - 4 hrs
  • 1/2 cup           Shallots, sliced
  • 2 to 3 cloves   Garlic, finely sliced
  • 1 tsp                Red chilly powder
  • 1/2 tsp             Coriander powder
  • 3/4 tsp             Pepper, crushed
  • 1/4 tsp             Turmeric powder
  • 1/2 tsp             Mustard seeds
  • 2 nos.              Dry red chilly 
  • 2 tbsp              Coconut oil
  • Few curry leaves
  • Salt as required

Making

Cook payar in enough water (at least 3 cups or as required) and little salt, until it is soft and fully cooked. To test press softly the grams between your figures and it should smash. If you soak the payar for long hours then no need to cook in pressure cook as it will turn out to be mushy.  If not able to do prior soaking, then you can cook in pressure cooker until you hear 2 to 3 whistles.  Drain the water completely and set aside.  Heat oil in an iron pan at medium heat. Add mustard seeds and let it splutter, add sliced shallots and garlic, saute until it turns light brown.  Add dry chilly, turmeric, chilly, coriander powder, curry leaves and saute them.  If the spices are getting burnt or dry just add a tbsp of water.  Add the cooked payar and crushed pepper.  Check for salt.  Stir fry for a few minutes and switch off.  Serve with Rice, Congee or Puttu.
