OMELETTE PARATHA

Ingredients

  • 1 nos.        Paratha
  • 1 nos.        Egg
  • 2 tbsp        Onions
  • 2 tbsp        Capsicum
  • 1 tbsp        Tomatoes
  • 1 tbsp        Mushrooms (optional)
  • 1 tbsp        Oil/butter
  • White Pepper
  • Salt as required

Making

Mix the egg with salt, pepper whisk it until it becomes fluffy.  Now add in the veggies and lightly whisk.

Here I have used ready to eat frozen Plain Paratha.  You can make your own Paratha.

In a non-stick pan drizzle 2 drops of oil and brush it around or spread it with a tissue. Pan on slow flame, place the Paratha and cook for few seconds (15-20) then turn over the Paratha
On the cooked side spoon in half of the egg mixture slowly and keep spreading it on the Paratha.  Cover the pan and let it cook on low flame.  When the wet egg becomes almost cooked, turn over the Paratha and spoon in the remaining egg mixture slowly on the other side and keep spreading it on the sides.  Drizzle 2-3 few drops of oil or butter on the sides of the pan. Cover the pan and let it cook.  Once the wet egg becomes almost cooked, turn over the paratha for few seconds.  Your yummy quick Omelette Paratha is ready to be served plain or with tomato ketchup.  Easy to roll in as Sandwich for people on the run or for tiffin.

Sandwich options:  Add in mayonnaise, ketchup and lettuce leaves and roll out to Sandwich.
