This is a vegan recipe and great way to health and
fast moving people, as there is no oil or fat. This Soup is so simple, yet
yummy and full of nutrition. I had prepared this soup based on theme of "Tri-Color" for Indian Independence Day. All NATURAL COLOUR.
- Pumpkin regulates blood pressure and it full of fiber, potassium, and vitamin C.
- Green Peas regulates blood sugar and contains remarkable vitamins, minerals and has fiber.
Ingredients:
- 2 cups Pumpkin
- 2 cloves Garlic
- 2 Shallots
- 1 Green chilly
- 1 cup Green Peas
- ½ cup Coconut milk
- Salt as required
Procedure:
Mix the coconut milk with adequate salt.
In a
pan, cook the peas with salt and little water. This should take 5 minutes max
and then fine grind to smooth paste adding water as required.
Simultaneously,
in another pan, add 2 tablespoon of water and cook the garlic, shallots and
green chilly for a minute. If required, you can add butter. Then add salt and
pumpkin. Close the lid and allow it cook for 5 minutes. In between keep
stirring to avoid sticking to the pan. Once it is cooled, then fine grind to
smooth paste adding water as required. Reheat the soup by adding enough water
and check for salt / chilly.
Pour
the soups in different layers and decorate it as you wish. Serve this yummylicious full of nutrients soup with some croutons / garlic bread / toast.
