Breakfast in a Jiffy !!!

A creamy peanut buttery-and-crunchy cornflakes in this recipe turn Plantains / Banana into an extraordinary treat.  This is very good for Breakfast and after a gym workout.  Banana / Plantains are available throughout the year and Berry being the winter fruit makes it deadly nutritious.

Plantains are a type of banana common in tropical regions. Less sweet than Bananas.  The ripe plantains can be eaten as it is, yet these ripe plantains are usually served steamed, boiled or fried. They are a rich source of antioxidants, vitamin B-6 and minerals, and their soluble fiber content may help ward off intestinal problems.


As a child I was very skinny and often told to start my breakfast with one ripe plantain and a glass of milk and that would make me look healthy and a bit bulky.  I don’t know how true is that.

Leaving my childhood stories now lets hop on this super duper easy recipe. 

Ingredients:

  • 1 Ripe Plantains (Big Banana)
  • 2 tablespoons Peanut butter
  • 2 tablespoons flaked coconut
  • 2 tablespoon cornflakes
  • As required Black berries
  • 1 tbsp ghee

Procedure:

Slit the plantains to length wise half.

In a small skillet, add ghee and saute the plantains on medium heat for 2 to 3 minutes on each, until it's golden colour. Let is caramelize. Remove from heat and set aside.

Place each piece cut side up and Spread Peanut butter on top of the Plantain. Sprinkle evenly the coconut flakes and cornflakes. Garnish with Blackberries.



Yummy delicious breakfast in a jiffy is ready
