CHEESY BROCCOLI WALNUT SOUP


"Cheesy Broccoli Walnut Soup" is one of the tasty and delicious soup that can be prepared in no time.  This is one such kind of a soup that can be prepared ahead and carry it to work for the following day.  It is a delicious mix between smooth and chunky bits and has become one of our favorite soups. What more i can say... a simple, quick and easy, with the goodness of fresh greens, nuts and cheese.  

As a working Mom, I always try ways on how to ease the cooking process with maximum nutrients.  In this recipe I have used kettle hot water, this is just to fasten the cooking process.  You can use room temperature water.

Kettle on and let’s begin with the super quick recipe that can serve up to 2 people.

Ingredients:

  • 3 cups hot Water
  • 1 – 2 Green Chilly
  • 2 cup Broccoli florets
  • 1 cup Peas
  • 6 – 7 Walnut Kernels 
  • 2 tablespoon shredded Mozzarella Cheese 
  • Salt flakes as required
  • Mozzarella slices to garnish

Procedure:

Kettle on while you assemble the ingredients.  

Pot on the fire and pour in the boiling water from the kettle, to save your time. Add in the broccoli, peas, chilly and salt. Bring the water to boil and cook for about 5 minutes, or until the broccoli is tender.  When done, set it aside to cool down.


Strain the cooked vegetables and retain the lovely green stock for further use.

Allow the vegetables to cool down and then in a blender, add the shredded mozzarella and the cooked vegetables with few spoons of the stock and grind it to smooth fine paste.


Mix the ground mixture along with the vegetable stock and cook it again, just for the flavors to amalgamate well. Check for the perfect seasoning before u serve.


In the center of the serving plate arrange the Mozzarella cheese slices and crushed walnuts. Gently pour the soup around.


Wallah.... your wholesome comforting soup with some buttery toasted bread is ready for a cold wintry morning.
