Whenever we think of outdoor family picnics, the menu is already set in our minds from ages. Our menu consists of Shish Tawooks, Sausages, Kebabs and Meats. We just need to plan and prepare the things ahead, no mess and easy for men to cook. Yeah, you read it right. This is the only meal that Mr. B loves to cook and I am saved from all the hassle of lighting up the grill and fanning it. While the men set up the grill and start to cook, we ladies lay out the mat and arrange our eatables, gossips and giggling while skewering the meat.
Picnic recipes are a great way to get out of the kitchen to enjoy your meals in the great outdoors. Fire up the barbecue and grill up a fabulous, mess-free meal accompanied by refreshing cocktails. Practically any food eaten outdoors in the company of another could qualify as a picnic
Now coming back to today’s recipe.....Chicken is a rich source of proteins and tastes amazing when grilled. Shish Tawook is yogurt and spices marinated on boneless chicken chunks that is skewered and is very popular in the UAE and Middle East. The yogurt tenderizes the chicken while the spices, herbs and other marinade ingredients infuse it with flavors. The end result is succulent and moist chicken pieces.
The Arabs love their Shish Tawook traditionally served with hummous and Khoobus / Pita Bread alongside with plenty of roasted vegetables and garlic. We too love it this way. In 30 minutes you have a grand feast. A great meal for outdoor cooking and picnics.
Ingredients for Shish Tawook:
- 500g boneless Chicken thigh or breasts
- 5nos. Chicken Sausages
- 150gm Greek Yoghurt
- 1 teaspoon Red Chilli powder,
- 1 teaspoon Paprika
- 1/2 teaspoon Turmeric
- 1 tbsp Ginger, chopped
- 2 tbsp Garlic, chopped
- 1 tsp Seven Spices powder
- 1 tbsp dried Parsley
- Metal or Wooden Skewers
- 50ml Olive oil
- 1 Lime juice
- Salt and White pepper, to taste
Procedure:
For the chicken kebabs, cut the chicken into bite size cubes that can be skewered.
Prick the sausages with the help of fork. This process is for the meat to absorb the marination.
Now rub the cubes and sausages with salt and lime juice and set aside.
In a blender, add the yogurt and all the spice and fresh ingredients. Blend to a smooth paste. Transfer this paste on to the chicken cubes and sausages, giving it a good mix. Check on the seasonings and adjust it as per your taste buds.
Let the chicken soak into the yogurt and spices for at least 30 to 45 minutes. For best flavorful results, refrigerate the marinated chicken for few hours or overnight.
To cook the chicken, either preheat a grill to medium-high or prepare a barbecue or on a normal cooking pan (as shown in this picture). Here i have grilled the chicken in the pan with a dash of olive oil.
Thread the chicken pieces onto metal skewers. If you are using wooden skewers, then remember to soak the skewers in cold water for around 10 minutes. The wooden skewers are soaked to avoid them getting burnt. Grill the chicken for 8–10 minutes, basting occasionally with the olive oil and the yogurt marinade.
While my chicken is getting ready, i am pan roasting some vegetables - Garlic, onions and marrow. Quickly marinate these vegetables with Olive Oil, salt and pepper and they are ready to be grilled. Serve the vegetables warm or at room temperature.
30 to 45 minutes and you have a feast to put on and mesmerize your guests.
ROAST POTATOES
Yet another stunning snack recipe that can be prepared in no time.
Ingredients:
- 2 large Potatoes, preferably long potatoes
- 1 teaspoon Thyme,
- 1 teaspoon Oregano
- 1 teaspoon Cumin powder
- 1 teaspoon pepper
- Rock salt, as required
- Olive oil
Procedure:
Skin on Potatoes cut into long wedges, par boil them or microwave for 5 minutes.
Rub on them the Herb Spice mixture (Thyme, Oregano, Cumin powder, Pepper, rock Salt, olive oil) and pan-roast them on medium flame.
Curd Dip:
Ingredients:
- 1 cup curd
- 3 garlic, crushed
- ½ tsp chilly powder
- Salt as per taste
Procedure:
Hung curd, crushed garlic with salt and chilly powder, combine them well and tada your sauce / dip is ready in a minute.
