MANGO CHEESECAKE PARFAIT


Parfait in French means "Perfect". Parfait is a frozen dessert made with cream, egg and sugar. While many desserts requires cooking or baking, this is a great dessert that requires no heat at all, making it a perfect recipe to make on a hot summer day. 



These Mango Cheesecake Parfait made with simple 3 ingredients – digestive biscuits, cream cheese and obviously the king of fruits Mango. Adding sugar or honey is optional. They're perfect for kid’s parties, or when that sweet tooth impulse strikes.

Ingredients:


  • 6 Digestive Biscuits
  • 2 cups fresh Mangoes cubed
  • 200 gm Cream Cheese (chilled)
  • 1/2 cup icing Sugar / honey
  • 1.5 teaspoon of Vanilla essence

Procedure:


To make this component, in a bowl add the cream cheese, vanilla essence and icing sugar and whip it with a hand blender for 4 to 5 minutes for form smooth thick paste.





Let it rest in the refrigerator, until you get your other ingredients ready. Adding a pinch of salt to the cheese cream mixture will enhance the taste, i am using Anchor cheese cream, that is mildly salted. 





I have used chocolate coated digestive biscuits, as my kids love chocolate in everything. Crumble these digestive biscuits using a rolling and set aside.



Slice the mangoes and cut them into small pieces.

Now assemble the cheesecake parfaits in your desired container and make it look gorgeous. Starting with a layer of the crumbled biscuits as the base.



Next, add the creamy cheese layer and finally the chopped mangoes. If desired, you can repeat the layers. Garnish with a Raspberry and a super yummy dessert is ready in 12 minutes. 

If you have the patience unlike me, then allow it to chill in the refrigerator for minimum 30 minutes before serving and enjoy! Or else dig into to it as I do!  Enjoy this blissfully indulgent dessert parfait.



The parfaits will remain fresh in the fridge for at least 2 to 3 days.
