Chimichurri is a loose oil-based condiment used to accompany barbecued meats or churrasco. It is an extremely versatile Argentina sauce, it goes great with BBQ’s, Steaks, grill Chicken and Seafood. Chimichurri is an herb lover’s sauce, with lots of fresh flat-leaf parsley, plus some fresh cilantro, garlic, vinegar, lemon juice, salt, pepper and olive oil. I call it as a palate cleanser! Definitely a simple, fresh sauce.
There are so many variations of Chimichurri, some add pepper, some don’t add coriander leaves, add fresh red chilies, red wine vinegar, lemon juice etc etc.

Ingredients:
- 1 cup fresh Parsley (about 1 bunch of parsley)
- 1 cup fresh Coriander leaves (about 1 bunch of coriander)
- 2 Tablespoons dried Oregano
- 3 large cloves of Garlic
- ½ cup Apple Cider Vinegar
- 2 teaspoon Paprika or more, to taste
- ½ cup good-quality Olive Oil
- Sea salt to taste
Procedure:
Fine chop the parsley and coriander leaves or put in a food processor and pulse few times until it is finely minced. Transfer it into a bowl.
Mince the garlic gloves. If you like strong garlic flavor, then you can use 4 cloves.
Now combine the minced garlic, leaves and add all the remaining ingredients such as oregano, paprika, vinegar, olive oil and salt. Give it a good whisk until all the ingredients combine well.
If you like more flavor adjust the garlic, salt, paprika as per your taste buds. You may add in chili flakes as well.
This sauce can be stored in a tight glass container in fridge for upto 1-2 weeks and can be used for Steaks and Spaghetti as well.
