Using frozen good quality puff pastry makes it super quick and super simple. And this is one such recipe that no one can go wrong in it. Having the pre-made pastry means you can serve it in less than 30 minutes!

With routine pantry ingredient strawberry tart is an incredible treat! The filling is made with mascarpone cheese, cream and icing sugar. It is light and creamy and a perfect match for the no so sweet strawberries. Yes my strawberries are not so sweet. But hey I have solution for the sweetness. Jam!

So let’s hop on to the recipe making.

Ingredients:

  • Frozen puff pastry sheets, thawed
  • 1 egg
  • ½ cup Icing sugar
  • ½ whipping cream
  • 300gm mascarpone cheese
  • 1 packet strawberries, washed and sliced
  • 1/4 cup strawberry or mix fruit jam
  • 1/2 tsp vanilla essence (optional)
For garnishing (optional):
  • Ice cream for garnish
  • Mint for garnish

Procedure:

Preheat oven to 400F.

On a parchment lined baking sheet.

Place the frozen pastry to thaw.

In a small bowl, whisk together the egg

Use a knife to score each sheets border with 3/4 of an inch inside from the edge of the puff pastry. Use a fork to pierce the inside of the tart several times.

Brush the pastry with the egg wash along the border.

Bake for 20 minutes until golden brown and cooked. Set aside to cool.

While the puff pastry is cooking, prepare the topping. In a large bowl, stir together the whipped cream, mascarpone cheese, vanilla essence sugar and whisk it until you see soft peaks. Chill it in refrigerator.

Slice the strawberry as desired. Cover and set it aside.

My strawberries were not so sweet, so I decided to sweeten it with some jam. Yep, just melt little strawberry jam or mixed fruit jam. The bonus of brushing jam over the strawberries is that it will give nice glaze and at the same time keep the strawberries fresh from wilting.

In microwave melt the strawberry jam for 50 seconds.

Once puff pastry is cool, top with a big dollop of cream cheese then arrange the strawberries and finally brush the melted jam all over the strawberry slices. Keep refrigerated until ready to serve.

Top with vanilla ice cream. Enjoy!
