AAM JHORA / KAIRI PANHA / MANGO DRINK


The weather is too hot and we need a refreshing drink that makes us cool and rejuvenate like never before. So let’s prepare “Aam Jhora”. Some call it “Aam Panna” or “Kairi Panha”. “Aam Jhora” is from the Marathi cuisine and is prepared with raw mangoes, mint, sugar, salt and some masala. This drink keeps us hydrated, makes our bodies cooler and even immune us from the scorching heat. Traditionally “Aam Jhora” is prepared with sugar, here for this recipe I have replaced sugar with ……….. (Shhh…..!  Read through the recipe to break the suspense or watch the recipe video link). Typically it is served chill with ice cubes toppings and soda, but this can be served with normal water as well. “Aam Jhora” can be made both sweet or savory.


Unlike other mango beverages, which are made with ripe mangoes, the “Aam Jhora” is made with sour and tender raw mangoes. The best part is that it is only made at home with love and not available in stores or supermarkets. Just to run you through the process, the mangoes are pressure cooked till it becomes soft and mushy. The skin is peeled off, retaining only the flesh that is mixed with any sweetener or salt and blended to smooth paste. To spice it up, add an assortment of spices such as cumin, chat masala, etc., and enhance the flavor. Thus the concentrate “Aam Jhora” is ready and can be preserved in the fridge for later use.

So let’s head to the recipe. Here I have taken Totapori raw tender mangoes. You may use any raw mangoes that are available.

Ingredients:-

  • 500gm Raw green mango (2 large mangoes – Totapori or Neelam mango)
  • 1 cup grated Jaggery / Sugar or to taste
  • 2 tsp Black salt
  • 2 tsp roasted Cumin powder
  • 2 tsp Chat Masala powder
  • 5 cup Water
  • Fresh Mint leaves
  • Water / Soda
Garnish: Lemon slices and mint leaves

Procedure:

Wash the mangoes very nicely and clean it.

In a Pressure Cooker, cook these mangoes along with 5 cups of water till it becomes soft. My pressure cooker gave 5 to 6 whistles and this depends on your cooker.



Allow the mangoes to cool down. Cooking in Pressure Cooker makes the mango flesh very soft. With the help of a spoon, scope the mango pulp and you can throw off the peel and the stone. 

I have scoped out the Mango pulp and we are ready for the next step. You can make “Aam Jhora” either savory or sweet. Today I will share with you the mixed version. For this I have used some spices. 

Into the mango pulp, add the mango cooked water, black salt, roasted cumin powder, chat masala and jaggery. I personally like jaggery flavor along with mango so I am using grated white jaggery. Jaggery can be replaced with the same quantity of sugar. Please do feel free to increase or reduce the spices as per your taste. Finally add the fresh mint.


All these goes into the blender and blend them well, if required add little water too. The concentrate “Aam Jhora” is ready. “Aam Jhora” can be stored in the fridge for up to many days. “Aam Jhora” should be transferred to a dry and clean container for a longer fridge life and thus ready to serve your guests.

Remember to use a dry spoon while scoping the Jhora from the container and avoid any kind of moisture.

How to serve: Let’s take a beautiful glass. I have added some ice cubes, 3 - 4 tablespoons of “Aam Jhora”, roughly chopped fresh mint leaves and finally added normal water or soda. Since this is for my kids, I am adding only water.  You may add Soda or cold water.

Mix well and garnish with mint and lemon slices. I hope you like this refreshing Aam Johra.
