JACKFRUIT POPSICLE / DIABETIC POPSICLE / Chakka Dessert


Just 3 ingredients are needed for this super quick "Magic Shell Jackfruit Popsicles" that’s dipped in dark chocolate and drizzled with some more chocolate sauce. Sharing the yummiest, healthiest "Jackfruit Popsicle" recipe, ready in just 5 minutes.


As long as you make sure to always have some frozen fruit on hand, you can whip these "Jackfruit Popsicles" in just 5 minutes.

Ingredients:

  • 500gms Jackfruit 
  • 1 - 2 Bananas
  • 1 cup Chocolate chips
  • 1 tbsp Ghee
  • 1 tbsp Milk (optional)
  • 1 pinch salt (optional)


Popsicle Procedure:

Here I have around 500gm of ripe Jackfruit and the arils are perfectly ripe and it is a vibrant yellow color without any dark patches. With this I can make 5 popsicles.



Cutting process:

Cutting the jackfruit is really a messy job, Jackfruit excretes an extremely sticky latex and this makes the cutting process messy and difficult. Here’s a trick, apply a generous amount of oil on your hands and knife, in order to avoid the gum sticking. The core of the jackfruit is inedible; therefore, discard it. If there's excess gum oozing out of the fruit, clean it using a paper towel.


Bend back the rind, spreading the internal threads. There are a lot of fibers present around the fruit, I don’t need them for making Popsicles. Now the edible portion will loosen up and now firmly grasp and twist the arils.

 

Another way to remove the Fruit arils is to just cut their base away from the rind. This process will make the jackfruit seeds visible. Whichever method you feel is easy, just do it.

 

Open the arils and remove the seeds. Of course I do not need the seed for making Popsicles. I will reserve them to make some vegetables or curry. 

 

Ahha finally finished with the cleaning.



Roughly chop the arils as I will be freezing them and bear in mind that I will not use any liquid or milk. 

 

 

To make the Popsicle dense and creamier, I have taken 2 medium size Bananas and sliced them and I will open freeze them along with the jackfruit for 2 hours at least.  



Spread out the fruit on a flat tray so that each piece can freeze individually.



Each piece has been frozen and now blend them until you get a completely smooth paste. Add a pinch of salt while grinding to smooth paste. The smooth paste is ready.

 



I have these classic silicone ice cream bar molds. I got this online, it is available on Amazon and Noon. I like these silicone molds because they’re dishwasher-safe and super easy to unmold the popsicles.

 


Place the ice cream bars molds on a flat surface to ensure the molds are evenly filled.



Insert the wooden stick before adding the filling. If you try to insert the stick after filling the molds, the filling may ooze out. Fill the Popsicle molds with the jackfruit/Milk mixture. If required, you can cover with foil or plastic wrap and allow it to freeze for 6 to 7 hours.


Magic Shell Procedure:

Let’s prepare the Magic shell, for the shell I have taken 3/4 cup Dark Chocolate, you can also use White Chocolate instead. Melt it in the microwave oven for 50 seconds and mix well or follow the double boiler method as I have done.

 


Double Boiler method:

Place the chocolate bowl over a pot half filled with water. Make sure the chocolate bowl does not touch the water. Melt chocolate gently on medium flame, stirring often to ensure even heating and no lumps.  

Add 1 tbsp. of milk and 1 tbsp. of butter/ghee, mix well until the chocolate chips are melted and the sauce becomes glossy. The ghee creates a silky, luscious chocolate sauce.



The sauce is ready and while the sauce cools and comes to room temperature let me check on the Popsicles.


If you are not a chocolate lover, you can avoid the Magic shell step. This is optional.

 

The Popsicles are perfectly frozen. Always ensure the bars are frozen solid before trying to unmold. To unmold, simply peel back silicone mold.

 


Dip the frozen Popsicle bars into the melted chocolate. The ghee solidifies and hardens thus creating that nice chocolate “Magic Shell.” Magic shells harden fairly quickly. This is done, now let’s unmold the rest of the popsicles and dip into the chocolate.

 



Drizzling some more chocolate sauce, and finally garnishing with some edible pearls and flowers. You’ll need to work fast to add toppings to make sure they stick to the chocolate.
