KANDA KOSHIMBIR / IMMUNITY ONION SALAD for Gut


Today’s recipe "Kanda Koshimbir" or “Kandachi Koshimbir” is for weight loss watchers, helps to reduce inflammation in the body and also protect organs like heart, liver kidney, skin etc.

At times, it is important to make necessary changes in our daily diet, so that our body is at ease and can accommodate the climatic changes. And in this weather, we are always asked to eat more of regular red onion, as it helps keep heat stroke away. But, do you know that there is a variety called "White Onion" too.


“Kandachi Koshimbir”, is a Maharashtrian recipe. ‘Kanda’ means ‘Onion’ and ‘Koshimbir’ means ‘Salad’.  This is the easiest recipe that has maximum health benefits during summer and high in vitamin C. This is a cool and refreshing salad! My childhood was spent in Pune and I am very familiar with the food culture of a Maharashtrians and deeply in love with the Maharashtrian cuisine. I am a mix of South Indian and Maharashtrian when it comes to food. Having Maharashtrian neighbors, I have been in and out of their homes so frequently that it was like a second home for me. I love the simplicity of the Maharashtrian food. Therefore, my taste in food and cooking style is heavily influenced by Maharashtrian cuisine.

KANDA KOSHIMBIR

Watch this whole video till the end as I will be sharing important health benefits. The recipe is quite simple and can be served as a salad or a mid-morning snack. This recipe takes just 5 minutes and is prepared with the common ingredients from our kitchen  and make this part of your daily meal.

Ingredients:

  • 1 White Onions
  • 2 ripe Tomatoes
  • 2 Fresh Chilly
  • Fresh Mint / Coriander / Parsley leaves
  • Handful of fresh grated Coconut
  • Salt to taste
  • 1 lime juice

Procedure:

The hero ingredient of our recipe is "Safed Kanda" which means "White Onions". Here I have taken 2 White Onions, these are medium sized.  Once you peel off the skin, it is advisable to wash or soak the onions for few minutes, before cutting them, as it will reduce a bit of pungent and the harsh flavor.

Cut the onion as tiny as possible.

The white onions are heart friendly because of the presence of antioxidant Quercetin in it. This is highly effective in controlling evening bloating, night sweats, and is also good for gut bacteria diversity, as it works as a prebiotic. Transfer the minced onions into a large bowl.

And the second important ingredient is Tomatoes, which has the presence of Lycopene another antioxidant. When combining the white onions and tomatoes, they help to reduce inflammation in the body and protect organs and boost our immune.


I have removed some of the seeds and minced the tomatoes as tiny as possible but do not lose any of the nutritious tomatoes juices. Add them into the minced onions.


Then, a handful of fresh Coriander leaves or Parsley leaves…. and…… if added couple of fresh Mint leaves, that will add a zinc to this salad.

Mince 1 fresh red chilly.  I used red chilly so that I can easily identify the chilly and remove it before eating. You can skip Chilly if you are serving to kids.

Add the leaves and chilly into the bowl and season with Salt as per taste. Add 2 – 3 tbsp. fresh grated Coconut and a juice of half lime or lemon. 

That’s it………….give a final mix and serve them immediately as a starter or snack or salad to your meal. Mix the ingredients only at the time of serving otherwise it will become watery.


You can prepare this salad in advance without salt and lime juice and store in fridge. Just before serving add in the salt and lime juice.
