BEANS THORAN / BEANS UPPERI


If you’ve never heard of the word “thoran” before, it just means “stir fry” and is a traditional Keralite way of cooking. You can make anything into a thoran! You need to grate or chop vegetables, mix them up with a few other ingredients, and stir-fry them all together.

  • Prep Time: 10 min.        Cook time: 5 min.
  • Servings: 4

Ingredients: 

  • 400 gms green Beans, chopped
  • 1 carrot, chopped
  • 4 shallots finely diced
  • 2 teaspoons garlic, chopped
  • 3 green chili, Slit, adjust to taste
  • Few curry leaves
  • 1 tablespoon coconut oil
  • ½ teaspoon black mustard seeds
  • ½ teaspoon cumin seeds
  • ½ cup grated fresh coconut
  • ½  teaspoon turmeric
  • 1 tablespoon water
  •  Salt as per taste

 

Procedure:

Finely chop the carrot and green beans, then set them aside.

Heat a pan and then add the coconut oil. Add the mustard seeds and let it crackle. Add the garlic, shallots and curry leaves. Stir-fry for less than a minute, then add the carrot saute for a minute and then add the turmeric, beans, and salt to taste. Stir well and add a spoonful of water. Cover and allow it to cook on medium flame for 2 minutes.

Grind the coconut, cumin seeds, and green chilies to a coarse powder. Add the ground mixture into the cooked vegetables and stir well.

The Bean Thoran / Been Upperi is ready to serve with steaming hot rice.
