If
you’ve never heard of the word “thoran” before, it just means “stir fry” and is
a traditional Keralite way of cooking. You can make anything into a thoran! You
need to grate or chop vegetables, mix them up with a few other ingredients, and
stir-fry them all together.
- Prep Time: 10 min. Cook time: 5 min.
- Servings: 4
Ingredients:
- 400 gms green Beans, chopped
- 1 carrot, chopped
- 4 shallots finely diced
- 2 teaspoons garlic, chopped
- 3 green chili, Slit, adjust to taste
- Few curry leaves
- 1 tablespoon coconut oil
- ½ teaspoon black mustard seeds
- ½ teaspoon cumin seeds
- ½ cup grated fresh coconut
- ½ teaspoon turmeric
- 1 tablespoon water
- Salt as per taste
Procedure:
Finely chop the carrot and green beans, then set
them aside.
Heat a pan and then add the coconut oil. Add the
mustard seeds and let it crackle. Add the garlic, shallots and curry leaves.
Stir-fry for less than a minute, then add the carrot saute for a minute and
then add the turmeric, beans, and salt to taste. Stir well and add a spoonful
of water. Cover and allow it to cook on medium flame for 2 minutes.
Grind the coconut, cumin seeds, and green
chilies to a coarse powder. Add the ground mixture into the cooked vegetables
and stir well.
The Bean Thoran / Been Upperi is ready to serve
with steaming hot rice.
