Ingredients:

  • 2 ripe Nendran bananas (Kerala bananas)
  • 3/4 cup all-purpose flour (maida)
  • 2 tablespoons rice flour (optional, for extra crispiness)
  • 1–2 tablespoons sugar (adjust to taste, optional)
  • A pinch of turmeric powder (for natural color)
  • 1 teaspoon nigella seeds (kalonji)
  • A pinch of salt
  • Water (as needed to make a thick batter)
  • Oil (for deep frying)


Instructions:

1. Prepare the Bananas

  • Peel the ripe Nendran bananas and slice them lengthwise into thin strips, about 4–6 slices per banana.

2. Make the Batter

  • In a mixing bowl, combine all-purpose flour, rice flour (if using), sugar, turmeric powder, nigella seeds, and a pinch of salt.
  • Gradually add water while stirring to create a thick, smooth batter that can coat the banana slices evenly.


3. Heat the Oil

  • Heat oil in a deep frying pan over medium heat. Ensure the oil is hot enough to fry but not smoking.

4. Dip and Fry

  • Dip each banana slice into the prepared batter, ensuring it is fully coated.
  • Gently place the coated slices into the hot oil, a few at a time, taking care not to overcrowd the pan.

5. Fry Until Golden

· Fry the banana fritters until they turn golden brown and crispy, flipping them halfway through for even cooking.


6. Drain Excess Oil

· Use a slotted spoon to remove the fritters from the oil. Place them on a paper towel-lined plate to drain any excess oil.

Serve the fritters hot with a steaming cup of tea or coffee.


Tips: 

1.Choose ripe Nendran bananas for the best flavor. The natural sweetness and firm texture of these bananas are perfect for Pazham Pori. Avoid overripe bananas as they may become too soft and difficult to handle.

2.For added flavor, sprinkle a tiny pinch of powdered cardamom or cinnamon into the batter.

3.Let the batter rest in the refrigerator for 15–20 minutes before dipping the banana slices. A cold batter can enhance crispiness during frying.

4.A pinch of turmeric powder adds a vibrant yellow hue to the fritters, making them visually appealing without overpowering the taste.

5.Ensure the oil is at the right temperature (around 180°C or 350°F). Too low, and the fritters will absorb more oil; too high, and they may burn before cooking through.
