CHEESE BLISS BALLS


“Cheese Bliss Balls” is an instant dessert that can be prepared in 30 minutes and can be refrigerated and stored in air tight container for 2 – 3 days. I have used store bought desiccated coconut, it is optional to use fresh grated coconut for making these bliss.

This is the simplest recipe that is nutritious and mouth-melting sweet. And off-course, the festivals are incomplete without sweets – ranging from intricate Indian sweets to real easy ones and these “Cheese Bliss Balls” make an excellent sweet to gift on any occasions.

Ingredients:

  • 150 g desiccated Coconut, unsweetened. Plus some more for rolling the balls
  • extra desiccated Coconut for rolling
  • 80 g Cream Cheese
  • 70 g frozen Blueberries 
  • 1tsp Vanilla extract
  • Icing Sugar as per requirement
  • Few drop of coconut oil to grease hands

Procedure:

Put the finely shredded coconut in a pan and roast for 1 - 2 minutes at low flame. Do not allow to change it’s color. Once done, rest it aside to cool down. This step is optional, but I prefer to dry roast the package desiccated coconut for a minute.


If you are using fresh coconut, then dry roast it for 5 to 6 minutes on a low flame to remove the moisture, but be carefully not to brown the coconut.

The cream cheese should be used direct from the fridge.
Place all ingredients into the mixer / food processor and blend them well until smooth paste.



Vanilla essence: The essence perfectly compliments the blueberries or you may use cardamom powder.

Transfer the mixture into a bowl and check the sugar. If required you may add more icing sugar and give a good mix.

Lightly grease your hand and roll the mixture into small balls of lemon size. To give the finishing touch, roll them over the desiccated coconut.



You may serve it immediately, but I recommend to refrigerate for 30 minutes so that it is firm in shape. These can be stored in fridge for up to 2 days.
