MADAKKUSAN / MADAKSAN / COCONUT FILLED CREPES

Madakkusan | Madaksan | Coconut Filled Crepes is an authentic dish from the land of Kerala.


"Madakkusan" is a traditional tea time snack with the stuffed sweetness. I have modified the original recipe to a healthier version as this has whole wheat flour and jaggery instead of sugar. It is a super simple, easy, and quick recipe. You can have it for breakfast or an evening snack or can have it as a dessert. It is a thin crepe that is prepared from a flowing consistency batter, filled with coconut stuffing and then rolled.

Ingredients:

  • Maida/ all purpose flour - 3/4 cup
  • Whole wheat flour - 3/4 cup
  • Fresh coconut - 1 cup, grated
  • Egg - 1 (optional)
  • Jaggery - 3/4 cup, grated
  • Dry nuts (almonds, cashew, raisins) - as required, chopped
  • Cardamom powder - as required
  • Turmeric powder - as required
  • Salt - a pinch
  • Milk - 500 ml or as required
  • Ghee/ clarified butter - as required

Procedure: 

In a pan, add fresh coconut, jaggery, and cardamom powder. Stir it continuously on a medium flame for a few seconds and turn off the flame.

Now, add dry nuts and mix well. Then, allow it to cool down.
In a bowl, add maida, whole wheat flour, turmeric powder, and salt. Mix well.


Add a little by little milk and whisk the batter properly to prevent it from lumps. Prepare the batter of flowing consistency. I would recommend adding whole egg to the batter. Mix well and set it aside for 10 minutes.

Now, heat a pan on a medium flame and add a little ghee. Rub it with the cloth over the pan.

Pour a ladleful of batter and spread the batter using the back of the ladle to form a thin circle.

Cook it until the edges start leaving the side of the pan. Then, flip it and cook it properly. Applying ghee to crepe is totally optional.

Now, transfer it to a plate and gently place the above-prepared coconut filling at the center.


Fold all the edges one by one.

Delicious Madakkusan | Madaksan | Coconut Filled Crepes is ready to be served.

TIPS:-
  • Adjust the sweetness as per the requirement.
  • Prepare the batter of flowing consistency.
  • Add the dry nuts as per your choice.
  • For garnishing, add chocolate syrup or strawberry syrup, or any flavor syrup as per your choice.
  • You can also use black raisins instead of golden raisins.
  • You can also store it in a refrigerator.
